The restaurant has become so popular that waiting in line for one or two hours to get a table is no exception. How did a restaurant serving such a traditional and ubiquitous Chinese dish become such a success? Hot pot restaurants, where fresh meat and vegetables are dipped in simmering broth, are extremely common across China. By now, Haidilao has over 15,000 people working for them and has also gone international, with more restaurants opening up in Singapore, the USA, and Seoul. The chain allegedly opens 20 new restaurants every year. From Shanghai to Shenzhen, Haidilao has 176 outlets in 53 Chinese cities. In Beijing alone, the chain has 36 locations. The restaurant is popular across China, where it has an annual turnover of approximately 450 million dollars. Now, 23 years later, it has become the dominant hot pot chain in the country. It has been over two decades since Zhang Yong, the owner of Haidilao (海底捞), set up his first hot pot restaurant in Jianyang, Sichuan, with a mere investment of 10,000 yuan (☑470$). At Haidilao, even the lonely eaters never eat alone – they get a teddy bear to dine with them. With its special business model and service creativity, people happily wait in line for two hours to get a table. Phone reservations are also an option, but don’t be surprised if the restaurant is so busy that phone calls go unanswered.Twenty-three years after opening its first restaurant, China’s Haidilao hot pot chain is hotter than ever. HaiDiLao is currently accepting reservations via its website. No opening timeline for that restaurant has been announced just yet. As Eater reported last year, the chain is currently working on a location in Midtown Houston at the MidMain development. This is the first Houston-area location for HaiDiLao, but it won’t be the last. When HaiDiLao opened its doors in Dallas-Fort Worth last month, the chain was immediately met with hours-long waits, even though its opening wasn’t formally announced. According to a press release, the chain transplanted some of its most skilled staffers from Cupertino, California to Houston to ensure that the restaurant opens smoothly.
